There are few things as comforting as chicken pot pie, am I right?
Actually, I lied. Deconstructed chicken pot pie with homemade biscuits is actually more comforting than the original.
It must be something about the cheesiness. Or the chiveyness. Or the creamy, savory chicken stew. Okay, it’s all of it.
(I just ate dinner writing this post and I’m already hungry again.)
This recipe is one of my very favorites to make in winter. It also freezes and re-heats in a snap (yes, even the biscuits!), so you can always have some on hand!
It’s a crowd-pleaser for dinner guests, relatives, and especially kids, and is great to make around the holidays as you can easily double the recipe to feed a large group. The next day, you can eat the leftover biscuits for breakfast. YUM!
